Angel Food Cake has an airy lightness and white
color, a very light texture and taste. It is a
great dessert to end a meal of almost any type of food.
Angel Food Cake Recipe
You will need a 10-inch tube pan (ungreased) and the
ingredients listed at the right.Preheat oven to 325° F
(163° C).
Cake preparation:
Sift and measure the
1-1/4 cups of cake flour. Sift together 5 times
the flour, sugar and salt.
Beat the egg whites in a
metal bowl until
they are foamy. Then, add the cream of tartar and
continue beating until stiff peaks form (but not dry).
The egg whites should be gloss and moist, clinging to
the bottom and sides of the bowl.
Add 1 teaspoon vanilla and
1 teaspoon almond extract to the bowl of egg whites.
Using a wire whisk, blend the eggs and fold in the flour
mixture. Do not stir.
Turn the mixture into the
ungreased tube pan. Bake slowly for 1 to 1-1/4
hours.
Invert the pan on a wire
rack until fully cooled (approximately 1 hour).
Loosen the sides from the pan using a butter knife.
Remove from the pan.
Cut with a serrated
knife and serve with fresh
fruit or berries.
