You will need one 5-inch by 9-inch bread loaf
baking pan and the ingredients listed at the right.
Use a non-stick pan if you have one available.Preheat oven to 350°
F (175° C). Grease and flour the
pan.
Makes one 5x9-inch
rectangular cake.
Prepare the
egg cake batter: Using an electric mixer and a
large mixing bowl, beat butter and sugar together until
creamy and fluffy.
Add the eggs
one at a time and beat well after each. Beat in
the vanilla and the sifted self-raising flour.
Then, pour into the prepared pan and bake 40
minutes. The cake will be fully baked when golden
brown and a toothpick
inserted into the center of the cake comes out clean.
Prepare the
whipped cream icing:
In a large metal mixing
bowl, combine the heavy whipping cream, sugar and
vanilla. Whip the mixture until thick.
When serving, dollop whipped cream icing on top of
slices of the cake. Add fresh berries to garnish
and sprinkle with powdered sugar.
