Prepare the
batter:
In a metal bowl with an
electric mixer, beat eggs whites until smooth and
foamy.
Add the sugar mixing
well, then add vanilla extract and salt, mixing until
smooth.
Add the flour a little
at a time mixing well. Then, mix in the
melted butter.
Stir in the shredded
coconut.
Spoon evenly into the 20
muffin cups. Place muffin pans in oven to bake
Bake for 20
minutes, checking with a toothpick. The cakes will
be fully baked when you are able to insert a toothpick
into the center of the cake and it comes out clean.
Remove to wire rack to cool.
